Cutting and boning
After carefully selecting the best meat, it is skilfully cut and cleaned to ensure the homogeneity and firm texture of the ham.
Seasoning, Mixing and Maturing
The previously selected meat is seasoned with rich spices and other seasonings. The flavours are mixed in and absorbed over a controlled maturing time.
Cooking
The leg or shoulder of pork is then put into the roasting tin. The tins are put into an oven where they are cooked at controlled temperatures and humidity until reaching cooking temperature.
